This is a dish I made on the road often. It’s a healthy, but tasty. Chicken can get dry, but with the broth it makes it juicy.
Serve 4 people
- 4 chicken breasts
- 2 leeks
- 200 gram of white mushroom
- 3 cup of beef broth
- Red wine
- Soy sauce
- Iceberg lettuce
Clean and cut the chicken into even strips. Salt and pepper them while they are frying in the pan. Add the sliced mushroom, sliced leeks and brown until soft. Pour the beef broth in the pan and simmer. Taste it and add the wine and soya sauce for a powerful taste.
Let it simmer together for a few more minutes until chicken and vegetables are fully cooked. Just before serving add the iceberg lettuce.
Serve with rice and some new baked bread. Yummy!
